I just made my first dairy-free egg-free soy(protein)-free chocolate chip cookies.
I confess, though, that they are not vegan. I went for the very old-fashioned baking fat of pure lard. Makes the cookies melt in your mouth, but also renders null and void the health benefits of going dairy- and egg-free. But I needed happy cookies, not healthy ones.

I have never used lard (and have only recently become acquainted with non-hydrogenated organic vegetable shortening). I can only imagine that those were some of the richest, most amazing chocolate chip cookies ever to grace your lips. Also, yes, when it comes to cookies, I second your assertion that health may be tossed to the wind.
